Grilled cheeses are our ultimate comfort and quick food. I love to mix in different ingredients to give them a cool twist. Lately, I have been also obsessed with grilling them on the waffle machine, that way you have the crisp edges through all the bread but some gooeyness inside the squares. Here’s an idea for when you have mushrooms and smoked Gouda waiting in your fridge…
Smoked Gouda and mushrooms waffled grilled cheeses
For 2 sandwiches
Total time – 15 minutes
Equipment – Waffle machine (optional)
For the mushrooms
Sliced mushrooms – 1 cup
Olive oil – 3 TBSP
Salt - ⅛ or a good pinch
Freshly ground black pepper – good sprinkle or to taste
In a large skillet put the mushrooms and pour the olive oil on the center of it. Sprinkle with the salt and pepper. Turn the burner to a moderate-high heat and toss everything frequently, sautéing for 3 to 4 minutes after the oil starts to sizzle. Set aside.
For the grilled cheeses
Rosemary and Parmesan country bread – 4 slices
Smoked Gouda cheese – around 8 thin wedges of ¼” thick approximately
Olive oil – a bit to coat the waffle grill
Place about 4 thin wedges of cheese on two breads. Place the mushrooms on top. Close the sandwiches with the other slices of bread. Coat the waffle grill with a bit of olive oil, you can use a brush for this. Press on the waffle grill for 2 to 3 minutes, in low-med heat, or until the machine marks that it’s done.
